Our Collection

The Harvest

Provenance

Where It Comes From

2,000 – 2,900 m Elevation

Chamba & Bharmour

Home to our Premium Rajma. These small, thin-skinned mountain beans are cultivated in the crisp air of the Bharmour region, resulting in a rich, buttery texture impossible to replicate at lower altitudes.

1,800 – 3,200 m Elevation

Kullu Valley

The cradle of the Guchhi. Fruiting briefly in March just after the snowmelt, these rare morels are wild-foraged by the same families who have walked these ancient forest paths for generations.

1,400 – 2,400 m Elevation

Shimla Hills

Nourished purely by rain and snowmelt, our Himalayan Red Rice is grown in the ancient terraced fields of the Shimla Hills, preserving an agricultural legacy that respects the mountain's natural rhythm.

Our Promise

The Full Story

From forest floor to your kitchen, every step is deliberate. Open each note below for the detail behind it.

Guchhi has resisted every serious attempt at commercial cultivation. That is precisely why it is rare — every cap comes from a wild mycelial network that has grown, undisturbed, for generations. Wild foraging keeps the flavour and the forest intact.
Each cap is cut at the stem by hand, so the mycelium below the soil survives to fruit again next season. Foragers carry the harvest down in breathable mesh, never in plastic, to keep it from sweating on the walk home.
Every product traces back to a named valley — Kullu, Chamba, Bharmour, or the Shimla hills — at elevations between 1,400 and 3,200 metres. Provenance is never a marketing line here; it is a place we can point to on a map.
We work with the same foraging families season after season, at volumes the forest can sustain. Packaging is kept recyclable, and nothing is added to extend shelf life artificially.
No kilns, no forced heat. Every batch is sun-dried over four to six days, turned by hand, until the moisture is low enough to store safely without losing the aroma that defines it.
Only whole, hand-graded caps are packed for retail. Broken or undersized pieces are set aside, so what reaches you is consistent enough to meet export-grade sorting standards.
Guchhi is FSSAI licensed (Lic. No. 23326001002346), with batch coding and date-stamping on every pack. Additional export and organic certifications are in progress and will be listed here as they are issued.
Behind every box is a family who has walked the same forest paths for generations, reading the snowmelt and the soil to know exactly when and where to look. We work directly with them — no middlemen between the forest and the pack.
