Guchhi Mushroom
The diamond of the forest. Prized worldwide for a deep, earthy, umami-rich flavour and a honeycomb texture nothing else quite reproduces.
Every cap is wild-foraged in the Himalayan region, cut at the stem so the mycelium survives, carried down in mesh, and dried in the sun for four to six days.

Why it is rare
Guchhi has resisted commercial cultivation, which is precisely why it commands a premium. The flavour is deep, earthy, and intensely aromatic, and the soaking liquid becomes a concentrated broth worth keeping.
The product is dried naturally for four to six days and stored cool and dry. Once opened, keep it airtight or refrigerated.
How to use
- Rehydrate in warm water or milk for 30 to 45 minutes.
- Rinse gently to remove forest debris.
- Strain and keep the soaking liquid for risottos, biryanis, or gravies.

The morels are gathered in a short spring window after snowmelt, where generational foragers walk the slopes by hand and carry them down in mesh so the crop stays intact.
